Cold-pressed coriander seed CARRIER oil is rare commercially; the widely available, credibly-produced form is coriander seed ESSENTIAL oil, steam-distilled from the seeds of Coriandrum sativum.
The essential oil is high in linalool, giving a sweet, soft, peppery-floral aroma. Look for the botanical name and batch GC-MS, and note that coriander leaf (cilantro) oil is a different material from coriander seed oil.
Because the reputable commercial product is the essential oil, the default use category here is aromatherapy rather than cooking.
One plant, two personalities: the leaf is cilantro, but the ripe seed of Coriandrum sativum gives something else entirely, warm, sweet-spiced, and faintly citrusy, with none of the leaf's divisive sharpness.
