Also known as linseed oil, alsi oil.

Canada, Northern US (Pacific Northwest), and Europe (Linum usitatissimum).

Flax seed oil is cold-pressed from flax (Linum usitatissimum) and is one of the richest plant sources of ALA omega-3. Unfiltered 'lignan' versions also contain flax lignans (plant polyphenols).

Its defining trait is fragility: flax oil oxidizes and turns rancid quickly when exposed to heat, light, or air. Reputable producers press it cold, protect it from light, and ship/store it refrigerated; many bottles are dated and marked 'keep refrigerated.'

It is used cold only, in smoothies, dressings, or off the spoon, and topically by some. It must never be heated for cooking.

Flax is among the most delicate oils in the kitchen, and it asks to be treated that way. It is never heated (warmth undoes exactly what it offers) and it lives in the refrigerator from the day it is opened. Fresh, it tastes gently nutty and grassy; past its window, it turns sharply bitter, which is the bottle's honest way of telling you it is done. Buying small, dark bottles and finishing them within weeks is the whole discipline.

Flax (linen) is ancient and biblical: linen garments and wicks recur throughout scripture. Flax seed itself has a long history as food and folk remedy.

Modern Uses

Flax seed oil is taken as a plant-based omega-3 (ALA) supplement, stirred cold into smoothies and dressings, and used in some skin and hair routines. It is never used for cooking heat.
