A slow drizzle of good olive oil over a finished dish, and a pause before you eat.

Before you carry the plate to the table, give the meal one last, unhurried touch. Drizzle a little good extra virgin olive oil over the finished dish and let it pool and catch the light. Notice the smell of it: the green and the gentle pepper. Then sit, and take a breath before the first bite. Cooking can be one more thing to get through, or it can be a small daily pleasure you make on purpose; let this be the second kind.
